Boil the potatoes in their skins. When cooked, remove from the water and leave to cool. Peel them and cut into rounds about one centimetre thick.
Thinly slice the onions and peppers and slice the tomatoes to the same size as the potatoes.
In a deep dish, arrange the ingredients in layers, starting with the potatoes, followed by the cod, onion, tomato and peppers and finishing with the olives. Sprinkle with salt and drizzle over a little olive oil. Serve cool.
